Our best tip: Many store-bought pie crusts are made with lard, so check the label and choose an all-butter or vegetable-shortening crust.

Holiday food safety: thaw turkey in the fridge, cook it to 165°F (74°C), bake stuffing in its own dish, and refrigerate leftovers within 2 hours. Use leftover turkey within 3 to 4 days or freeze it.

Ingredients

  • 1 unbaked 9-inch pie crust (homemade or an all-butter store-bought crust)
  • 1 can (15 oz) pumpkin puree (not pie filling)
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 can (12 oz) evaporated milk
  • 1 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • whipped cream, for serving

Instructions

  1. Heat the oven to 425°F (220°C) and fit the crust into a 9-inch pie plate, crimping the edge.
  2. Whisk the pumpkin, brown sugar, eggs, evaporated milk, spices and salt until smooth. Pour into the crust.
  3. Bake 15 minutes, then lower the oven to 350°F (175°C) and bake 40 to 45 minutes more, until the edges are set and the center jiggles slightly.
  4. Cool completely on a rack, at least 2 hours, then refrigerate. Serve with whipped cream.
Notes: Many store-bought pie crusts are made with lard, so check the label and choose an all-butter or vegetable-shortening crust. Store leftovers in an airtight container in the fridge.
