Our best tip: Make the bean and sauce mixture a day ahead. Add the onion topping just before baking so it stays crisp.

Holiday food safety: thaw turkey in the fridge, cook it to 165°F (74°C), bake stuffing in its own dish, and refrigerate leftovers within 2 hours. Use leftover turkey within 3 to 4 days or freeze it.

Ingredients

  • 1 1/2 lb fresh green beans, trimmed and halved
  • 3 tbsp butter
  • 8 oz cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 1 cup chicken or vegetable broth
  • 1 cup whole milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups crispy fried onions

Instructions

  1. Heat the oven to 375°F (190°C). Boil the green beans 5 minutes, then drain and rinse with cold water.
  2. Melt the butter in a large skillet and cook the mushrooms 6 to 8 minutes until browned. Add the garlic for 30 seconds.
  3. Sprinkle in the flour and stir 1 minute, then slowly stir in the broth and milk. Simmer until thick, about 4 minutes. Season.
  4. Fold in the green beans and half the fried onions. Spread in a 2-quart baking dish.
  5. Bake 20 minutes, top with the remaining onions and bake 5 minutes more until golden.
Notes: Make the bean and sauce mixture a day ahead. Add the onion topping just before baking so it stays crisp. Store leftovers in an airtight container in the fridge.
