Ingredients
- 3 cups all-purpose flour
- 1 tsp salt
- 1/3 cup vegetable shortening or vegetable oil
- 1 cup hot water
Instructions
- Mix the flour and salt. Rub in the shortening with your fingers until it looks like coarse crumbs (or stir in the oil).
- Add the hot water and knead 3 minutes into a smooth dough.
- Divide into 12 balls, cover and rest 30 minutes.
- Roll each ball into a thin 8 inch round.
- Cook in a dry, hot skillet 30 to 45 seconds per side, until lightly spotted. Stack in a towel to keep soft.
Notes: Keep cooked tortillas wrapped in a towel. The trapped steam is what makes them soft and bendable. Store leftovers in an airtight container in the fridge.
