Ingredients
- 12 oz linguine or spaghetti
- 4 tbsp butter
- 6 cloves garlic, minced
- 1/4 tsp red pepper flakes
- 1 cup grated Parmesan
- 1/2 tsp black pepper
- 2 tbsp chopped parsley
Instructions
- Cook the pasta in well-salted water until al dente. Reserve 1 cup pasta water before draining.
- While the pasta cooks, melt the butter in a large skillet over medium-low and cook the garlic and pepper flakes until fragrant, 2 minutes. Don't let it brown.
- Add the drained pasta and 1/2 cup pasta water and toss.
- Off the heat, add the Parmesan in handfuls, tossing constantly and adding pasta water until the sauce is creamy.
- Finish with black pepper and parsley.
Notes: Add the cheese off the heat. Too hot and it clumps instead of melting into a sauce. Store leftovers in an airtight container in the fridge.
