Ingredients

  • 2 inch piece fresh ginger, thinly sliced
  • 3 cups water
  • 1 lemon, juiced, plus slices to serve
  • 2 tbsp honey
  • 1 pinch cayenne (optional)

Instructions

  1. Simmer the ginger in the water for 10 minutes. Longer makes it spicier.
  2. Turn off the heat and stir in the lemon juice and honey until dissolved.
  3. Strain into mugs, add a lemon slice and a tiny pinch of cayenne if you like heat.
Notes: Add the honey once the water is off the boil so it keeps its flavor. Never give honey to babies under 1 year old. Store leftovers in an airtight container in the fridge.
