Ingredients

  • 1 whole chicken (4 to 5 lb)
  • 2 tsp kosher salt
  • 1/2 tsp black pepper
  • 3 tbsp butter, softened
  • 1 lemon, halved
  • 1 head garlic, halved crosswise
  • 6 sprigs fresh thyme
  • 1 lb small potatoes, halved

Instructions

  1. If you can, salt the chicken all over and refrigerate uncovered overnight. Otherwise salt it 1 hour ahead.
  2. Heat the oven to 425°F (220°C). Pat the chicken dry and rub the butter all over and under the breast skin.
  3. Stuff the cavity with the lemon, garlic and thyme. Tie the legs together.
  4. Scatter the potatoes in a roasting pan, set the chicken on top and season with pepper.
  5. Roast 70 to 85 minutes, until the thickest part of the thigh reads 165°F (74°C). Rest 15 minutes before carving.
Notes: The overnight dry-salt is the single biggest upgrade to any roast chicken. Store leftovers in an airtight container in the fridge.
